Chicken Stuffing Casserole, Pre-baking

This Chicken Stuffing Casserole is one of my favorite recipes. It’s great because it can be used as a meal or as a side if you’re having a large family gathering. Aside from cutting up the chicken, is fairly quick and easy to make. This is the base recipe, but I have also made it with about a cup of chopped broccoli added to the recipe, as well. It was delicious, but we don’t always have broccoli and not everyone is a fan, so play around with it if you want! :)

1 6oz package of stuffing mix for chicken
1 lb chicken breast, cut into 1 inch pieces
1 12oz bag of frozen mixed vegetables
1 10.5oz can condensed cream of chicken soup
1/2 cup milk
1 cup shredded cheese, Cheddar or Colby Jack

Preheat oven to 400 degrees. Prepare the stuffing mix according to the package directions. While it is setting, stir together remaining ingredients in a 13×9 baking pan. Evenly spread the stuffing over the top of the mixed ingredients. Bake for 30 minutes!  Wasn’t that simple?! It’s even more delicious! :)
