Easy Homemade Pancakes!

You never have to buy pancake mix again!!! I first made “from scratch” pancakes a few years ago, but I have tweaked this recipe over the years. I haven’t bought pancake mix since the first time I made these, and don’t think I ever will again! This recipe is inexpensive and the ingredients are typically always on hand. So awesome! To make the Strawberry-Banana pancakes from the photo, just add about 4-6 diced strawberries and two diced bananas. They are also delicious with diced apple and sprinkled with cinnamon, or throw in some blueberries! Even if you don’t want fruity pancakes, just leave out the fruit and make some yummy plain pancakes with this same recipe!



1 1/2 cups flour (I use unbleached, whole wheat flour but all-purpose works, too!)

3 teaspoons baking powder

1 teaspoon salt

3 teaspoons white sugar

1 1/2 cups milk

1 egg

3 tablespoons butter, melted


Makes about 10 pancakes, depending on the size you prefer.

Mix together the flour, baking powder, salt, and sugar in a large mixing bowl. Pour in milk, egg, and melted butter; mix well.

Pour batter onto a lightly-buttered skillet or griddle that is already warmed to medium heat. Cook until small bubbles begin to form on the top of the pancake. Flip and cook until the under-side is lightly brown. Remove from heat, butter, and serve with your favorite syrup or honey!
