You never have to buy pancake mix again!!! I just had to share my new recipe for my absolute favorite pancakes! These Strawberry-Banana Pancakes are so easy and inexpensive to make, and require ingredients you probably already have. Don’t have strawberries or bananas? Substitute an apple and sprinkle with cinnamon, throw in some blueberries, etc! Even if you don’t want fruit in your pancakes, you can just leave out the fruit and make some yummy plain pancakes with this same recipe!
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
3 tablespoons butter, melted
2 bananas, diced
4-6 stawberries, diced
Makes about 6-8 pancakes, depending on the size you prefer.
Mix together the flour, baking powder, salt, and sugar in a large mixing bowl. Pour in milk, egg, and melted butter; mix well. Add banana and strawberry chunks and gently stir until well-mixed in with the batter.
Pour batter onto a lightly-oiled skillet or griddle that is already warmed to medium heat until small bubbles begin to form on the top of the pancake. Flip and cook until the under-side is lightly brown. Remove from heat, butter, and serve with your favorite syrup!
